Step 1: prepare the mushrooms.

Wash the champignons under warm running water and transfer to a cutting board. Using a kitchen knife, cut the mushrooms in half, and then each half into small pieces and transfer them to an empty plate.

Step 2: prepare the onion.


Using a kitchen knife, peel the onion and rinse well under running water. Then we transfer it to a cutting board and, using the same sharp equipment, cut it into small squares. Transfer the chopped onion to a free bowl.

Step 3: prepare the onion and mushroom frying.


Pour vegetable oil into a frying pan and place it on medium heat. When the oil is hot enough, transfer the chopped onions and mushrooms into this container. Using a wooden spatula, mix well and simmer them, stirring constantly, until slightly golden brown. Then add salt and pepper to taste. Turn off the burner and transfer the onion-mushroom dressing to a free bowl. The roast should cool to room temperature.

Step 4: prepare the loaf.


Place the loaf on a cutting board and, using a kitchen knife, cut into thin slices no more than 1 centimeter. Attention: for sandwiches you can use not only a loaf, but also white bread, as well as small buns made from wheat flour. Bread products must always be made from finely ground wheat flour.

Step 5: prepare the cheese.


Using a coarse grater, grate the cheese into an empty plate. It is best to use hard cheese to make hot sandwiches.

Step 6: prepare hot sandwiches with mushrooms.


Using a kitchen knife, spread the loaf slices on top with a thin layer of butter. Then, using a teaspoon, place the onion-mushroom mixture on top of the creamy layer and distribute it evenly over the entire surface of the bread. We crush the top layer with cheese shavings, and on top of the cheese, using the same cutlery, apply a layer of mayonnaise. Mayonnaise must be applied to the sandwich in a thin layer. Otherwise, it may spill onto the baking sheet during baking, and the sandwiches may burn on the bottom.

Place the sandwiches on a baking sheet at a short distance from each other so that they do not touch during baking. When the oven reaches temperature 180°С, place the container with the dish in the oven. Sandwiches bake very quickly only 5-7 minutes. When the cheese has melted and the mayonnaise has browned a little, turn off the oven and, using oven mitts, remove the container with the finished aromatic dish from the oven.

Step 7: Serve hot mushroom sandwiches.


Immediately, using a kitchen metal spatula, transfer the sandwiches onto a wide dish and serve. Fragrant, tasty, hot sandwiches with mushrooms can be served with a cold glass of beer or with a vegetable salad.

Let's prepare the products according to the list. My champignons were not super fresh, so I peeled the caps and removed the remaining compost from the stems using a kitchen sponge. In my opinion, gray bread is ideal for these sandwiches, but it also turns out delicious with white.

We chop the mushrooms very finely, especially the stems, and the onions in the same way, put everything in a frying pan, pour in just a little odorless vegetable oil and cook over medium heat for 4-5 minutes.

If you wish, you can add finely chopped bacon, ham or sausage, the filling will become tastier with them, but if you don’t find anything similar in the refrigerator, then you can easily do without them, the sandwiches will still be very tasty. I peppered the filling, but did not add salt due to the presence of bacon, you can do it to your liking.

Transfer the filling into a deep bowl, let it cool slightly, add grated hard cheese, mix everything well.

Place slices of gray bread in a small baking tray, generously spread the mushroom and cheese filling on top, place in the oven preheated to 200 degrees for 5 minutes.

Serve hot sandwiches with mushrooms and cheese baked in the oven piping hot. The bread will dry out slightly, and the cheese will melt and bind the filling.

Delicious, quick hot sandwiches with champignons

My favorite hot sandwiches are with cheese, and also with champignons! This is truly a restaurant dish that can be prepared at home in the oven in 5 minutes.

The recipe for these delicious hot sandwiches with mushrooms and cheese originates from a cozy cafe not far from home, which we went to when I was about 15. There, in tents under a spreading willow, they served delicious hot sandwiches with mushrooms - huge, for the palm of your hand. didn’t fit, so I ate one sandwich and was full! Having tried and studied the sandwiches, we began to prepare them at home. And for more than ten years the recipe has remained one of my favorites. Because it's fast, simple and very tasty!


Ingredients:

  • Slices of white bread (loaf) – 3-4 pcs.;
  • Butter – 20 g;
  • Onion – 1 small onion;
  • Champignons – 100g;
  • A little sunflower oil for frying onions and mushrooms;
  • Hard cheese – 50g;
  • Mayonnaise – 1-2 tablespoons;
  • Greens to garnish sandwiches.

Instructions:


Finely chop the onion and fry in a frying pan with sunflower oil, stirring, for 3-4 minutes over medium heat.


Peel the champignons, wash and cut into thin slices. Add the mushrooms to the onions and continue to fry together until the onions and champignons are lightly fried and acquire an appetizing, rosy color.




Lightly spread the slices of bread with butter - just a little bit, just to cover the holes :) After all, the mushrooms and onions were fried in butter. But it’s still worth spreading butter - during baking, the butter melts and the bread turns out juicier.




Place the champignons and onions on the bread, trying to keep the oil in the pan.



We “draw” a thin mesh on top with mayonnaise.

And put it in a hot oven (200-220C) for 5 minutes.




A nuance: if you want the sandwiches to be soft and only the cheese to melt, put it for a shorter time at a lower temperature, for example, at 180C for 3-4 minutes.

  • Then add sour cream. Cook with sour cream for only 1-2 minutes until thickened. Turn off the gas and add parsley and a pinch of nutmeg to the mushrooms. Season with pepper to your taste.
  • Grate the cheese. The taste will largely depend on the cheese you choose. You can take sheep or goat cheese - it will turn out very elegant. Or choose Parmesan - then the dish will get Italian notes.
  • Spread the bread slices with tomato sauce or place thin slices of tomato on each slice.
