What can you cook for a picnic? Menu for nature

Many of us like to celebrate significant events in life in nature: in a forest clearing, by a lake or river, near the sea on the sand. What could be better than getting away from the boring city bustle for at least a few hours, and preferably for the whole weekend. Whether it’s a tent, a wooden house in the forest, a car as a place to sleep, a five-star apartment - for many there is no significant difference. The main thing here is to walk around barefoot, sing songs by the fire, chat with friends, swim in the river, and who knows how many other pleasures you get from the trip? But an important question: “What to cook outdoors?” can also be very relevant. After all, even for a one-day picnic you can’t take everything ready with you, especially if the trip is long and in the hot season. And even more so if a three-day communication with nature is expected. In this material, we will try to imagine what to cook for the table in nature, so that the holiday spent in the “field conditions” is a success.

Natural menu

As a rule, when planning to go on a short forest vacation, rarely does anyone think through the menu so scrupulously. Usually they rely on intuition and Russian chance. But you still need to imagine the main dishes and snacks, at least in order to take with you the right products and in the right quantity. Therefore, it may be useful to sketch out a rough list of dishes on a piece of paper. Typically, the list of what to cook for an outdoor holiday may consist of one or two main courses and several appetizers and salads. All sorts of sandwiches and their derivatives go well: canapés, tartines, tartlets, sandwiches (we’ll talk about their great variety and quick ways to feed a whole crowd a little later). It is also worth considering drinks, especially if you plan to go outdoors with children. But let's tell you everything in order.

Main dishes

You should think about what you can cook in advance. The top most popular dishes, of course, include dishes made over a live fire, on a grill or other frying equipment. But the variations of these dishes can be very different: shish kebab, grilled meat, barbecue, baked fish, lula kebab. Vegetables baked on a grill and baked potatoes as a pioneer side dish are also popular among people. In order to prepare all this, it is necessary to carry out some preliminary actions, without which the holiday will certainly be incomplete.

Preparatory work

  • At a minimum, you will need a grill. Very popular today are simple small folding barbecues that can be easily installed almost anywhere. Attention: when using a barbecue in the forest (and not only), you must follow fire safety rules and keep small children away from the burning fire: this can lead to the fact that your holiday may soon end unsuccessfully.
  • You also need to take care of the wood and coal that you will use to light the fire. We shouldn’t rely on the fact that we’re going to the forest anyway and there’s always a lot of firewood there. Firstly, there may be a lot of people like you, and natural firewood may simply be taken apart. And then you will spend a certain amount of time trying to find them. And secondly, not all types of wood can produce good fried meat, keep this in mind. Therefore, we buy a couple of good bundles of firewood and, in addition to them, a bag (sold in many supermarkets or gas stations), especially if we plan to cook for a large company. It is advisable to buy a bottle of quick-ignition product so as not to bother with all sorts of newspapers and forest pine needles and bark. No, there are, of course, fans of lighting a fire the pioneer way, using improvised means, but believe me, meat over such a fire may not turn out to be entirely edible and not soft enough.

Cooking shish kebab

What to cook in nature if you are planning to go there with a fairly large group? This popular and beloved dish is the first thing that comes to mind. Kebabs differ in the choice of meat, additional ingredients and seasonings, and the marinade in which the meat was soaked. Today we will try to cook traditional pork kebab.

Choosing meat

This procedure, accordingly, must be carried out in advance. The choice of the part of the carcass is yours. Some people love neck kebabs - they turn out fatty and ruddy. Some people love tenderloin (it turns out a little dry, but it cooks, especially after soaking, in one, two, three times). Some people prefer the back. Yes, and one more piece of advice on this topic: try to calculate the amount of raw materials with a reserve. It will be awkward if the finished kebab turns out to be not enough or if someone simply doesn’t get the yummy food.

Soaking

Professionals say: the success of kebab directly depends on the marinade in which it was soaked. Therefore, this issue should be given increased attention. Here are several marinade options for a successful barbecue (tested in practice):

  • The fastest and easiest way is in kefir. This is if the meat was purchased immediately before the picnic and needs to be soaked quickly. Take 1% kefir - such an amount to completely cover the chopped meat in the pan. Add chopped onion and spices there. Mix everything thoroughly and cover with a lid. In just a couple of hours, the meat will be successfully marinated.
  • Meat soaked in light beer or dry white wine (sour) with the same spices and onions has a good taste. In the Caucasus they even produce special ordinary wines for soaking shish kebab. But in this case, the semi-finished product should marinate for at least three or four hours, or better yet, all night. Then the meat becomes very tender and cooks quite quickly.
  • Mayonnaise, just not too fatty, will also work for the marinade. After pouring out the mayonnaise and adding spices and onions, the meat should be thoroughly kneaded with your hands in a saucepan and only then set aside to marinate. And one more thing: it is recommended to add a couple of drops of vegetable oil (preferably olive) to mayonnaise.
  • French mustard marinade. You need to buy French (not spicy) mustard, add a spoonful of lemon juice and spices. Mix everything thoroughly with the meat.
  • Some people use mineral water with lemon juice and spices as a marinade.

Choose any marinade to your taste (the Soviet version using vinegar is not given here on purpose, since it still leaves a characteristic vinegary taste in the meat).

The problem of what to cook in nature has almost already been solved. All that's left to do is fry the kebab itself.

  1. Firewood or coals should burn thoroughly. Never cook over an open blazing fire: the meat will burn on top, but the inside will be raw.
  2. An ordinary spray bottle (like for ironing clothes) helps to put out fire. Some craftsmen constantly water the meat, thus creating a kind of steam bath over a fire. And the meat turns out very tender.
  3. Remember to constantly turn the skewers. This way the kebab will brown evenly on all sides.
  4. You can check readiness by cutting a piece of meat up to the skewer. If there is no pinkish tint, then the kebab is ready.

Add-ons

Now let’s talk about what to prepare for a barbecue outdoors. So, one of the main dishes has been produced. But you won’t eat naked kebab. It comes with appetizers, side dishes, and salads. What to prepare for a barbecue outdoors? Let's try to offer several options without unnecessary frills - very simple in execution, just suitable for the category of rough food in nature:

Cooking on the fire

By the way, what can you cook outdoors on a fire, so to speak, open, without the use of devices such as a barbecue? Excellent options are Cossack kulesh, lagman, pilaf, fish soup. The latter option is more suitable for those who combine business with pleasure: when going on a picnic, you also take a fishing rod with you. For all of the above dishes, you need to have a good and spacious cauldron (preferably with a tripod on which it can be hung over the fire). For the rest, on the topic “What to cook for an outdoor picnic?” recipes for dishes can be different (each has its own secrets).

Pilaf

For real Uzbek pilaf, of course, you need lamb, but not everyone likes its characteristic taste. In this case, you can cook it with pork ribs - it’s simply delicious! By the way, instead of lamb fat, regular pork fat is perfect. So, let's start cooking:

  1. We place the cauldron on a tripod over it should be, but not strong. Pour some vegetable oil into the cauldron.
  2. Place the fat in a bowl and melt it. We remove the cracklings. Separate the ribs one at a time and place them in a cauldron. Stir and fry until crusts form.
  3. Peel a couple of onions and cut into half rings. Throw in the meat. Fry.
  4. Add grated carrots and simmer until softened. Then add water to cover the meat and vegetables, and simmer for another 30 minutes. Then add salt.
  5. Place pre-soaked rice (it’s better to take long, non-sticky rice) into a cauldron. Fill with water. The ratio of water and rice is 2:1.
  6. Later, we make a large hole in the middle of the mass to remove air and excess water. Cook for 20-30 minutes (until the rice is ready, but it varies). Just before the finale, stick garlic cloves around the perimeter.

Such a tasty dish, smelling of campfire smoke, is one of the best options to cook outdoors (photo above). The pilaf is eaten hot, divided into portions. You can sprinkle with fresh herbs as a healthy decoration.

What to cook for an outdoor picnic: snacks

There is one simple rule about outdoor snacks: they should be simple and uncomplicated. Because, firstly, everyone wants to relax and socialize, and not fool themselves with an overly complicated performance. And secondly, nature itself favors simplicity and a minimum of sophistication.

What to cook for a picnic in nature? Snacks can be very different. The simplest thing that comes to mind is sliced smoked meats and cheese, decorated with vegetables. Everything is simple here. You need to take several types of smoked meat and lard, cheese, cucumbers and tomatoes with you when going outdoors. Next, we do this: take a huge dish (enough for the whole company), cut all this stuff into thin slices and artistically arrange it in random order, decorating with sprigs of dill and parsley.

Pickles are also one of the fastest and most delicious options for what to cook outdoors. Everyone's recipes are different. These can be rolled cucumbers or tomatoes, oriental eggplants with garlic and pepper, plums in a spicy sauce. We act quickly and simply: open the jars, put them in prepared containers, and decorate with fresh herbs. You can make a mix of pickles: arrange cucumbers with tomatoes, for example, or make a salad of pickles, adding fresh onions and seasoning with vegetable oil.

Birthday

But the most convenient and hassle-free option for this holiday, which is usually attended by many guests, is sandwiches, tartlets and canapés. What is their charm and significance for a picnic? Proper kebabs in nature

Minimum ingredients required: meat and onions.

If you get meat from a fresh suckling pig, then you can omit the onions.

All other additives are designed to make the meat softer, juicier and tastier. Therefore, it is pickled using kefir, lemon juice, dry wine and many other liquids. They also add various spices and spices to it.

So, a kilogram of pork, half a kilo of onions and a liter of kefir is all you need for happiness. Further results depend on the skill of the cook. But, from the listed components, even a novice kebab maker has a chance to make excellent kebab.

When cutting meat, try to make pieces that are roughly equal in size. It is best in the form of cubes, with a side of three to five centimeters. All substandard items must be handed over to the cat.

Marinade for barbecue

How much vinegar to add to kebab? As Professor Preobrazhensky would say, only landowners who were undercut by the Bolsheviks soak shish kebab in vinegar. A self-respecting person uses kefir.

Tastes could not be discussed. But, in my opinion, salt and vinegar overpower the taste of any food. Including meat. I recommend avoiding them completely when preparing barbecue.

In addition to this, salt added to the marinade draws out moisture and dries out the meat. If you absolutely cannot live without salt, then salt the meat a little when it is already on the skewers.

Instead of vinegar, it is best to use kefir, dry wine (white or red), or, in extreme cases, fresh lemon.

Additionally, you can use any additives to your taste in the marinade: tomatoes, apples, bell peppers... The quantity is arbitrary, you can experiment.

But with spices you need to know when to stop. Otherwise, you will be eating something with a dominant spice flavor, and not real kebab. Do not add black pepper to the marinade at all. It will then be added to the finished barbecue by those who need it.

A little about marinating technology

If you use dry wine or kefir, the marinade should completely cover the meat.

When using lemon juice, pour a little over each layer of kebab. Use no more than 1 lemon per kilogram of meat.

You need to marinate the meat for 3-4 hours, but you can also marinate it for a day if you want to prepare it in advance or are traveling far.

If you don’t have time or don’t want to bother with the marinade, then all of today’s large supermarkets sell preparations for barbecue. Alternatively, this can be used. Plus, there are also markets. Moreover, at the market you can choose fresher meat, and if you ask, the seller will make a preparation for the shish kebab in front of your eyes in 5 minutes, using lemon and a couple of onions.

How to grill kebab

First you need to prepare the coals.

When going to a barbecue near the city, do not expect to find firewood on site. Your predecessors and ordinary tourists have long burned everything that burns. Therefore, you need to take firewood or ready-made coal with you. In the summer, both firewood and coal are sold in many supermarkets and gas stations.

If you are not a master at making fires, or take ready-made coal, then do not forget about the lighter fluid. Just don’t pour too much liquid - it should only set fire to coal or wood, nothing more. You cannot fry meat on it.

When using firewood, you will have to wait a bit until the fire burns out and coals appear.

The finished coals should be evenly distributed under the place where you will place the skewers.

By the way, the best firewood for barbecue is alder. They have the most delicious smoke. If there is no alder nearby, then aspen or birch will do. Coniferous trees (pine and spruce) cannot be used because of the resin they contain.

There should be no open fire, only smoldering coals.

While the fire is burning, you need to put the meat on skewers.

This also needs to be done correctly: the pieces should be pressed tightly together - this way they dry out less and you get a juicier kebab.

By placing pieces of meat on a skewer, you can alternate them with rings of onions and fresh tomatoes.

So, the coals are ready and the meat is on skewers. You can begin the frying process.

Frying process

There is no need to rotate the skewers and move them continuously from place to place. This only dries out the meat. From time to time, of course, you can lift them and monitor their condition so that they do not burn.

You need to wait for a golden brown crust to appear on one side of the kebab. When it appears, turn them over and wait for the same golden brown crust to appear on the other side. After this, the kebab is considered ready to eat.

The most common mistake made by beginner barbecue cooks is the desire to properly fry the meat. To do this, they cut it into small pieces and hold it over the coals until they begin to become covered with a black crust. The meat becomes dry and tough.

Believe me, on good coals, the meat will cook perfectly, even if it is cut into very large pieces. The temperature above the coals is very high and 10-15 minutes is enough for the meat to be well baked on the inside and get a golden brown crust on the outside.

Yes, by the way, if the pieces are large, then they make the most juicy and delicious kebab.

What can you make shish kebab from?

From any meat, poultry and even fish.

Pork - take the neck, as the meat on it is soft, with fat evenly distributed. Take any other parts only if there is no neck. It should be noted that pork kebab is the most win-win option that is difficult to spoil.

Lamb - only if you are sure it is fresh.

Beef kebab turns out to be a bit tough.

Chicken shish kebab.

You can, in principle, fry a whole chicken. This is more troublesome, but interesting. Moreover, you can do without skewers or an iron mesh, as usual. It is enough to drive several small pegs made of raw wood into the ground, crucify a chicken carcass on them and cover the entire area under the chicken with smoldering coals. Don’t worry, the pegs won’t have time to burn while the chicken is cooking. After 10-15 minutes, turn it over to the other side and add fresh burning coals.

Wait another 15 minutes. After this, the chicken is ready to eat.

Fish kebab.

It is best made from fatty fish such as salmon or trout. Although any fresh fish, for example pike, will do. But this is more likely not barbecue, but baked fish.

We will not consider kebab from wild boar, elk, quail and sturgeon due to their rarity.

With any choice, the original product must be absolutely fresh, not subjected to freezing or defrosting. And it shouldn't be too fatty.

Garnish for barbecue

No matter how delicious the kebab is, it is advisable to take care of the side dish.

You can do it without exotic things: cucumbers, tomatoes, lettuce. Any fresh herbs go very well with barbecue.

Or you can prepare something original, for example, baked potatoes. Here's who loves what.

Be sure to take juice or water to drink. Mineral water goes well with hot barbecue. It is better to take more drinking water, as there is often a need to wash something - greens, vegetables, hands.

With alcohol, the main thing is to use moderation. For me, it’s better to drink a couple of glasses of good and tasty wine than to drink a banal bottle of vodka. And the next day you will enjoy life, and not sadly think, why did I get so drunk yesterday.

When going out for barbecues, don’t forget to take a knife, napkins, several plates and glasses, even disposable ones. And, when leaving back, fold up all the remaining garbage and take it with you to the city.
