Make pancakes from kefir. Benefits of pancakes with kefir

Pancakes with kefir are a traditional Russian dish. Even in ancient Rus', thanks to the mistake of our ancestor who, while heating the jelly, forgot about it, the first pancake appeared.

Pancakes are different, easy to prepare, but nevertheless delicious. It is not for nothing that this delicacy is considered a favorite dish on the table in everyday life, and especially on the Maslenitsa holiday.

Since our ancestors, back in pagan times, chose this dish because it resembles the sun in shape and color. The Russian people have a sign that the one who eats the largest number of pancakes at Maslenitsa will have a lucky year.

But do you know where the Maslenitsa holiday comes from?

About a hundred thousand years ago, people celebrated the holiday of the arrival of spring, the main symbol of which was a hungry bear awakening after hibernation. This holiday was called Komoeditsa (from other Slavic koma - these are bears). In order to appease the hungry bear, people baked pancakes and brought them to his den. This is where the proverb comes from, which we often use in our lives: “The first pancake is lumpy,” that is, to the bear.

Later, church ministers renamed the holiday Maslenitsa. And with the first pancake, they commemorated the soul of the deceased person.

Today the saying has lost its original meaning. And people use this saying when they fail at something.

There are many varieties of pancakes. With kefir, oatmeal, with seasoning, custard, with milk or just with water.

Cooking pancakes with kefir

As a result, you will be able to make very thin, tasty, airy pancakes. They can be filled with any filling (vegetable, fruit, meat, mushroom, etc.) or simply greased with butter.

We will need simple ingredients:

  • Chicken eggs - 1 piece
  • Butter - 1 tablespoon
  • Kefir - 500 milliliters
  • Salt - 0.5 teaspoon
  • Soda - 1 teaspoon
  • Vegetable oil - 5 tablespoons
  • Flour - 2 cups
  • Sugar - 1 tablespoon
  • Water - 1 glass

Method of making pancakes

Pour in kefir (cold or room temperature). Properly beat our egg, sugar and a little salt in a container separately. Pour the resulting mass into kefir and mix everything thoroughly (it is advisable to use a mixer). Sift all the flour and mix with soda. Slowly pour into the kefir mass so that there are no lumps and beat until smooth.

Note. To ensure that there are no lumps in the dough, you need to use proven good quality flour. It is better to beat the dough with a whisk (it does not “love” household appliances).

Heat up our frying pan and lightly grease it with vegetable oil. Scoop some dough into a ladle and pour it into the frying pan. Bake them until golden brown, then turn them over with a spatula and cook until done. After preparing the first pancake, we no longer grease the pan with oil.

Place on a plate and, if desired, grease the kefir pancakes with butter. They can be stuffed or simply served with honey, condensed milk or jam. Kefir pancakes can also be used to make pancake pie; it will turn out very tender.

Pancakes are a simple and accessible way to quickly feed the whole family. They can be prepared very quickly if you have all the necessary ingredients on hand. Most often this dish is prepared with milk, but it may not be on hand, so housewives ask the question: “Is it possible to make pancakes with kefir?” We will try to find the answer to it together and find the most unusual and delicious recipes for this homemade delicacy.

Classic pancakes made with kefir are completely indistinguishable from those made with milk in appearance. They have a fluffy and loose consistency, which allows you to eat this dish with sour cream, honey or butter. Kefir pancakes, just like regular ones, perfectly absorb jam and other products with which they are often served.

In appearance, real Russian pancakes are a juicy and glossy dish. It is imperative to have a porous structure, which makes the pancakes softer and airier. It is the delicate homemade pancakes that are the standard of quality. Kefir pancakes are much easier to make porous and delicate. To do this, just add a little soda to the dough, which, when reacting with the acidic medium of kefir, will begin to release carbon dioxide.

It is its presence in the dough that gives the famous openwork effect in the pan.

What kind of frying pan should you buy to cook pancakes with kefir?

Nowadays there are many different devices for making pancakes on the market. On store shelves you can find electric pancake makers and special frying pans with ceramic or Teflon coating. Classic pancakes with kefir or milk should only be cooked in a real cast-iron frying pan.

There are two features: the frying pan should only be used for preparing this delicacy and should not be washed. Don’t be afraid that your kefir pancakes will turn out quite well in an unwashed frying pan. After all, no one has canceled other methods of cleaning. The cast iron frying pan in which you will cook thin or thick pancakes with kefir must be cleaned with coarse salt.

To do this, after cooking the pancakes, pour vegetable oil (about 2 tablespoons) into the frying pan and distribute coarse table salt evenly over the entire surface of the frying pan; just add one heaped tablespoon. With this mixture, you need to heat the pan and then remove the salt from the surface using a simple sponge.

For final cleaning, add salt again and remove it with a sponge. Then wipe the pan with a dry and clean cloth, after which you can put it away for storage. In such a frying pan you can cook pancakes with kefir or any other dairy product. This is how our grandmothers cared for their frying pans, thereby extending the service life of the dishes.

The use of kefir does not affect the properties of pancakes in any way. Just like regular ones, they can be served at any time of the day with sweet and savory fillings.

However, before presenting various recipes for pancakes with kefir, it is worth talking about such an important stage as baking. Unless the recipe specifies a different baking method, it is produced according to the following rules:

Before baking the first pancake, you need to drop a little sunflower oil into the frying pan and spread it over the frying surface with a brush. It should be covered with a very thin film of odorless oil. Under no circumstances should pancakes made with kefir “float” in a large amount of oil.

The dough is most often poured with a ladle. Every housewife gets used to her kitchen utensils; over time, you will remember how much dough you need to make. During the cooking process, you can adjust how much dough you need to scoop in order to get thin kefir pancakes. Pour in the batter a little at a time and tilt the pan to spread it across the bottom of the pan.

If you heat the stove well, the pancakes will brown in a matter of seconds, so carefully watch the edges of the poured dough. When one side is ready, it becomes slightly brown, at which point the pancake needs to be turned over.

Experienced housewives pry the edge with a knife and turn the pancake over with their hands. This is a very dangerous method unless you have special skills, so beginners should use a thin wooden spatula for turning pancakes or a knife with a wide blade.

You shouldn’t even try to flip kefir pancakes by tossing them in a frying pan, since due to lack of experience, the incompletely fried dough may land on the stove or on the hand holding the frying pan. If you have sufficiently greased the pan, there will be no difficulty in flipping the pancakes.

If this is your first time preparing pancakes with kefir, a recipe with a photo will help you correctly complete all stages of dough preparation and baking. Remember the saying that the first pancake should be lumpy. If you fail the first time you make pancakes, don't be discouraged and try again. Next we will look at some of the most popular and unusual recipes.

Classic pancakes with kefir

To prepare the most ordinary pancakes you will need to take:

  1. two glasses of kefir with any fat content;
  2. a glass of sifted wheat flour;
  3. two eggs (first category or selected);
  4. sugar and salt to taste (usually add 1.5 tablespoons of sugar and a pinch of salt, but to prepare stuffed pancakes with salty filling you should use a little less sugar - 1 spoon);
  5. a pinch of soda (due to it the pancakes will become delicate);
  6. three tablespoons of vegetable oil.

The dough for pancakes with kefir begins by beating eggs, salt and sugar. To do this, it will be best for you to use a whisk. It should be used throughout the entire cooking process. If you beat the dough well with a whisk, the pancakes will turn out fluffy and without lumps of flour. If you don’t want to work manually, you can replace the whisk with a mixer or blender with a special attachment.

Soda is mixed into kefir before it is combined with eggs, this will result in a more violent reaction and kefir-based pancakes will turn out tender and delicate. Place kefir and soda in a cup or pan with the prepared egg mixture and mix everything well again.

The sifted flour should be added in small parts, this will make it easier to break up all the lumps. Pancakes are baked with kefir in the same way as described above. Some should turn out very thin and delicate.

This recipe for thin kefir pancakes can be used if you want to stuff them with different fillings.

The most delicious are pancakes filled with curd mass with dried apricots or raisins, and the most satisfying are those stuffed with chopped ham mixed with coarsely grated cheese and a drop of mayonnaise.

Experimental recipe for kefir pancakes with soda

If you like to surprise your family with unusual baked goods, then you should take note of this recipe. For a glass of kefir you will need the following quantities of products:

  • one glass of sparkling water (you can use mineral water, but some housewives prefer to add “Lemonade” or “Bell”);
  • three large chicken eggs (can be replaced with 6 quail eggs, with them kefir pancakes will also turn out very tasty);
  • you can take the same amount of salt and sugar as in the previous recipe (these ingredients are most often added “by eye”);
  • half a stick of butter (about 100 grams);
  • a glass of flour.

Remember that kefir pancake dough will succeed only if you measure out all the ingredients in the same glasses. Russian recipes have used a glass as a measure since Soviet times. At that time, glasses with a volume of 250 ml were produced according to the state standard. There is even a table of how many grams of different bulk ingredients and liquids can fit into such a glass. It was used to “Russify” recipes for dishes from foreign literature.

However, a lot has changed since then, and now glasses can be from 180 to 300 ml, so it is best to have a standard measure in your kitchen - a glass or mug with a volume of 250 ml. It will help you accurately measure all the ingredients and pancakes with kefir will be a success.

To prepare the test for experimental pancakes, you will need to heat the oil with kefir. The butter should be cut into small cubes so that it melts quickly. Then, one by one, you need to add all the ingredients to the kefir-oil base: sparkling water, slightly beaten eggs in a separate bowl, sugar, salt and flour.

Wheat flour must be sifted and added in parts, stirring the dough with a whisk.

These pancakes are baked with kefir in a dry frying pan, as they contain enough oil. We will not describe the frying process in detail, since it has no other features. This recipe for kefir pancakes is most often used for making desserts. They can be served with any jam or preserves.

You can make them thin or thick yourself - the final appearance of the pancakes depends on the amount of dough poured into the pan.

Kefir pancakes: recipe for beetroot delicacy

If you want to surprise your family with the appearance and taste of the dish, then there is nothing more interesting than preparing bright burgundy pancakes based on kefir and beets. For this unusual dish you will need:

  • kefir – one glass;
  • milk - half a glass;
  • a pinch of salt;
  • one medium-sized beet;
  • a little less than a glass of flour (take a whole glass and while kneading, look at the thickness of the dough; as soon as it becomes liquid but elastic, stop adding flour to kefir pancakes);
  • one large egg;
  • three tablespoons of sunflower oil.

First, wash and boil the beets. You will need to make a puree from it, so after the vegetable is completely boiled, peel it and cut it into small cubes. Tender puree without pieces is best prepared in a blender.

Whisk everything, gradually stir in the wheat flour and add vegetable oil. Before baking, the dough should stand for about 30 minutes, then you need to mix it and fry the pancakes in the usual way.

These pancakes made with kefir and beets are served with sour cream or stuffed with boiled or fried pieces of meat with spices and onions.

You can choose absolutely any meat, but pork suits your taste best with these pancakes.

Thin kefir pancakes, lacy and with holes, are another type of these delicious fried products that are worth exploring. We have already prepared them and they also had holes, there will be some differences in the recipes, but also a lot of similarities. In one of the previous recipes, I told you how to cook with kefir, and now we will cook so that the same kefir will help us make pancakes thin and holey, like lace. It's all in the dough, I'll tell you and reveal a few secrets.

First of all, the whole point, of course, is in the kefir itself, which, as a product of fermented milk fermentation, releases carbon dioxide, that is, it simply bubbles. And if you add soda to it, the process will even intensify. By the way, for pancakes you can and even need to use kefir that has already stood for a couple of days and its shelf life is approaching the end, but has not yet expired. It's all about fermentation, which intensifies over time. If you have a package of unfinished kefir in your refrigerator, then making pancakes from it is the best and most delicious way to use it.

Still, good kefir without chemical additives does not last longer than three days, but it is not always possible to drink it. Once I had such a case that I brought kefir from the store, which I bought, forgetting to look at the date of manufacture. It turned out to be nearing the end, and even the bag was slightly inflated. Kefir had not yet had time to spoil, but it was close to it. So I saved the situation with a whole stack of delicious pancakes for the whole family. And then I bought new kefir.

Let's see how to cook delicious thin pancakes with kefir.

Delicious kefir pancakes in a hole - recipe with boiling water

Such pancakes made with kefir and boiling water are also called custard pancakes. True, this is not exactly the same as choux pastry, for example, for eclairs. Here, the whole brewing process consists of adding boiling water, which helps the flour disperse and all the ingredients dissolve. The dough becomes homogeneous, and the pancakes then become thin and strong. They do not tear or crumple.

You will need:

  • kefir - 2 glasses,
  • flour - 2 cups,
  • eggs - 2 pieces,
  • sugar - 2 tablespoons,
  • salt - 1/4 teaspoon,
  • baking soda - 1/2 teaspoon.

Preparation:

1. If you've made pancakes before, you probably remember that the easiest way to start is by stirring the eggs and sugar. Beat them just a little, just to mix the sugar, salt and eggs until smooth and slightly foamy.

2. Then pour kefir into the egg mass and stir a little more with a whisk so that they combine well. Kefir will even foam a little from active stirring, and this is only to our advantage.

3. Now it's time to gradually add flour. Do this in parts, stirring each part. This will result in fewer lumps, which are sometimes very difficult to grind into the finished dough. It is also good if the flour is sifted through a sieve or a special mug.

4. The dough should be homogeneous and thick enough, like cream or sour cream. Why, you ask, if we are preparing thin pancakes. Let me remind you that we make pancakes with kefir and boiling water. We have already poured the kefir, and boiling water will bring the dough liquid to the desired level.

5. Boil water in a kettle, pour it into a mug immediately, do not let it cool. Now add baking soda to the water and stir until it dissolves well. And after this, boiling water and soda can be poured into the dough and immediately begin to quickly stir it. If you don’t hesitate, the dough will not curl or cook; everything will mix well until it has a homogeneous consistency. At the end, add vegetable oil and stir until the oil circles on the surface disappear.

6. After this, our dough will be liquid enough to make the pancakes thin and delicate. The baking soda and kefir will react and start producing bubbles. It's time to start baking pancakes.

Heat a frying pan; if you have a cast iron or special pancake frying pan, coat it with a thin layer of oil. Even though you add butter to the dough, you still need to grease the pan the very first time.

Pour pancakes into the pan using a ladle. Tilt it so that the dough is thin and evenly distributed.

7. It’s not at all difficult to determine when it’s time to flip the pancake. The edges begin to brown and fall away from the pan, and the middle becomes dense and full of holes. Lift the pancake with a spatula or knife and turn it over. It will be golden and openwork. On the second side, the pancake needs to be cooked a little less time, literally a minute or two and it’s time to remove it.

Each prepared pancake can be greased with a piece of butter while it is still hot. These pancakes are very tender and smell delicious.

Thin openwork pancakes made with kefir and boiling water are ready. Bon appetit!
