  • carrots - 1 pc.;
  • potatoes - 3 pcs.;
  • tomato - 1 pc.;
  • bell pepper - 1 pc.;
  • greens - 1 bunch;
  • salt, pepper - to taste.

How to cook:

Soak bean seeds in water for half an hour. Wash the meat, cut the wings into several parts at the joints.

Place chopped onions and carrots in a multicooker bowl and sauté on the “Fry” mode. Add pieces of meat to fry, continue frying for another 10 minutes, stirring constantly.

For 4 servings of soup you will need:

  • 200 gr. sausages;
  • 1 small onion;
  • 1 small carrot;
  • 2 small potatoes;
  • 1 clove of garlic;
  • 1 small chopped tomato;
  • a glass of lentils (here you can choose red, green or black);
  • 1 tbsp. oils;
  • 1 liter of water;
  • salt, pepper and spices to your taste

Preparation:

1. Lightly fry the sausage in a small frying pan, about 2-3 minutes on each side. Using a slotted spoon, place sausage on a plate to drain excess fat.

2. In the same pan, fry the onions and carrots for 3 minutes. Then add the chopped tomato, season with salt and pepper and simmer for 2-3 minutes.

3. Take a pan of water, add lentils and bring to a boil. Then reduce the heat to medium, add the vegetable mixture from the pan, cover and cook until the lentils are cooked.

Remember! Each type of lentil takes a different time to cook, red can be cooked in 15-20 minutes, and green - up to 45 minutes.

4. Add sausage and diced potatoes to the soup and cook for 15-20 minutes until the potatoes are completely cooked.

5. When serving, you can add a couple of tablespoons of cream to the soup. Bon appetit!

Red Lentil Soup

For the soup you will need:

  • 1-1.5 cup red lentils;
  • a bunch of green onions;
  • a little curry;
  • 1 cm fresh grated ginger;
  • 3-4 tbsp. tomato paste;
  • salt to your taste.

1. Lentils need to be washed. Take a pan, pour water, add lentils and put on fire. Bring to a boil, reduce heat to medium and cook until tender.

2. When the lentils are cooked, add curry, fresh grated ginger and tomato paste and cook for another 5 minutes.

3. Remove the soup from the heat, take a blender and beat the soup a little so that whole grains remain.

4. After the soup has been whipped, you need to add chopped green onions. And you can serve!

French lentil soup with vegetables

This is a wonderful tasty soup, aromatic and very nutritious. To prepare 6 servings you will need:

  • 1 large onion;
  • 2 medium carrots (cut into cubes);
  • 3 cloves of garlic;
  • 1 stalk of celery;
  • 2 tomatoes, diced;
  • 1 liter of water or chicken broth;
  • 2 bay leaves;
  • salt, pepper and other spices to your taste.

Preparation:

1. In a saucepan with a couple of tablespoons of olive oil, fry the onion and celery until the onion is translucent and soft, about 5 minutes.

2. Add carrots and garlic, stirring constantly, and fry for another minute.

3. Add diced tomatoes, chicken broth, lentils, salt, pepper and bay leaf. Bring the soup to a boil and simmer for 45 minutes.

4. Once the lentils are cooked, use a blender to puree the soup until the broth thickens slightly or to your desired consistency. It's best not to completely puree as the soup will become too thick.

I learned the recipe for this dish thanks to, I saw in the Cyprus Airlines magazine. This recipe for a delicious soup, also quick to prepare, later became the basis for me to create several more delicious lentil soups.

Thanks to such a simple recipe with a small amount of ingredients, there is a better understanding of the presence of some essential ingredients that, when combined with lentils, create a tasty and satisfying soup. These include such regular vegetables as carrots with their sweetish taste, and tomatoes, followed by a sour ingredient - lemon juice or wine vinegar.

Compound:

for 3-4 servings

  • 1.1-1.2 liters of water
  • 140-160g (175-200ml) green or brown lentils
  • 120-160 g peeled carrots
  • 1-2 petioles or 60-80 g celery root
  • 180-250 g tomatoes
  • 2-3 tbsp. spoons of vegetable oil
  • spices:
    1/3-1/2 tsp.
    black pepper or a mixture of peppers to taste
  • 1.3 teaspoons salt
  • 1-2 tbsp. tablespoons (or to taste) lemon juice
  • 1-2 teaspoons per serving (to taste) fresh cilantro

As you can see from the photo of the Cypriot original recipe, lentils are used to prepare the soup in larger quantities, so that the thickness of the dish is more similar to the second one. I prepare this soup more liquid, with the same thickness as I usually prepare all soups.

When you use brown lentils in soup, the broth turns dark. To avoid this, I prepare these lentils for cooking in soup in my own way. Then my ordinary brown lentils begin to look like something else – polished with a yellowish tint. Such polished yellow lentils can also be found on sale.

Products for soup

  1. Before cooking the soup, soak the lentils in cold water for several hours or overnight so that they can be easily and quickly peeled.
  2. Then, in a container with water, we grind the swollen grains with our hands - we take them in the palm of our hand and, squeezing them, rub them together. Then add more water and drain it (preferably through a sieve) with the separated brown skin. And we repeat this several times. Lentils purified in this way turn into light yellowish and will no longer give the soup a dark, brown, but a pleasant yellow tint.

  3. Pour the prepared lentils into a soup pot with cold or hot water. Bring to a boil.

    Advice: Lentils, like all legumes, boil well when placed in cold water. If you need to maintain the shape of the grain, then you need to put any legumes in hot water.

  4. Cut the celery stalk into thin slices.

  5. Add chopped pieces of celery to the pan with lentils.

  6. Preparing carrots for soup. Cut it in half lengthwise, then each half into 2 more pieces if the carrots are large. Cut the resulting cubes into thin slices.

  7. Pour the chopped carrot pieces into a frying pan with heated oil. Sauté over medium heat, stirring occasionally, for several minutes so that the carrot slices are coated in oil (for more complete absorption of carotene).

  8. Transfer the fried carrots from the frying pan to the pan with the lentils.

  9. We cut the tomatoes into small pieces and also sauté in oil, but not for long. Then add them to the saucepan with the soup to the already soft carrots and boiled lentils.

  10. add salt and cook after boiling for several minutes until the tomatoes are soft.
  11. Then add asafoetida, ground pepper and cook for about a minute.

  12. Turn off the fire. Lentil soup is ready!

    Before eating, add lemon juice to the pan with soup, stir and pour into portions. There is another option: everyone squeezes a slice of lemon directly onto their plate.

Before serving, you can add finely chopped aromatic coriander (cilantro) to a plate of lentil soup.
