  1. We prepare all the ingredients for preparing Olivier with squid. Potatoes and carrots need to be boiled in their skins until tender. Boil chicken eggs hard.

    Also boil the squid in advance. To prevent the squid from being tough, boil it in boiling water for 2-3 minutes. If you cook the squid longer, it will become rubbery, so be careful when cooking this ingredient.

  2. Peel the eggs and cut into cubes.

  3. Peel carrots and potatoes and cut into small cubes.

  4. Place chopped eggs, potatoes, carrots in a saucepan or bowl and add green peas.

  5. Cut the squid into strips and add to the rest of the ingredients.

  6. Add mayonnaise and salt to taste. It is best to use homemade mayonnaise, as it does not contain harmful food additives or stabilizers.

  7. Mix the salad well. You can serve the salad at the table. If you are preparing the salad in advance, do not add the mayonnaise right away or stir the salad.

  8. Olivier salad can be served simply on a plate or in a large salad bowl. Or you can serve the salad in a festive way, for example, on New Year’s.

    To do this, put a serving ring on the plate (I used a tin can without a bottom instead, it turned out very convenient and cheap).

  9. Place the salad in it and press down with a spoon. To keep the salad better, you can put the plate in the refrigerator for 15 minutes, but I didn’t and the salad didn’t fall apart.

  10. Carefully lift the serving ring. Decorate the top with a sprig of parsley.

½ chopped onion will perfectly complement Olivier with squid. If the onion is sweet, chop it into the salad just like that. If it burns, it is better to pour boiling water over it - this will remove the pungent odor and bitterness.

To do this, pour boiling water over the chopped onion in a glass, let it sit for 5-6 minutes, and then pour it through a sieve. Let it drain properly and put it in the salad.
