  2. Adding a little flour, roll each part into a layer about 1 cm thick. The layers should be rectangular and of the same size.

    Roll out into layers

  3. Place the brown dough on top of the white dough.

    Place the brown layer on the white one

  4. Roll out until the double layer is about 1 cm thick.

    Roll out

  5. We begin to cut strips along the short edge of the layer.

    Cutting off the strips

  6. We turn the resulting strips on their sides and lay them out from the opposite edge of the layer close to each other to create an alternation of white and brown layers.

    Place strips on the other side of the dough

  7. Continue cutting and laying out strips until the entire surface of the dough is filled, except for a couple of centimeters at the edges.

    Filling the entire area

  8. Roll the dough into a roll so that the strips run along the roll.

    Roll up

  9. We crimp the roll well along its entire length.

    Compacting

  10. Continuing to crimp, we make the roll smoother and thinner, giving it the desired thickness, which will determine the size of the cookies. It is better to put the finished roll in the refrigerator for an hour so that it does not deform when slicing.

    Leave it in the refrigerator

  11. Cut the roll into circles. The thinner the circles, the crispier the Snail cookies will be.

    Cut cookies into snail shapes

  12. Place the cookies on a baking sheet with parchment at a distance of 2 cm from each other, bake at 200 degrees for about 20 minutes (baking time depends on the thickness of the cookies, you need to watch when the edges begin to brown).
  13. “Snail” cookies are ready! Bon appetit!

Preparing the dough:

I kneaded the dough in a bread machine. I placed all the ingredients for the dough in a loaf pan according to the instructions for my bread machine. After 2 hours and 20 minutes, my dough was ready.

You can knead the dough by hand: dissolve fresh yeast in warm water (130 grams). In a separate bowl, mix the dry ingredients for the dough: sifted flour, sugar, milk powder, salt. Make a well in the middle and pour in the dissolved yeast, beaten egg, and melted butter. Knead the dough into a soft dough so that it does not stick to your hands. You may need to add a little flour. Place it in a warm place for 1-2 hours, it should increase in size by 2-2.5 times.

Preparing the filling:

Mix sugar, cinnamon, cranberries and nuts.

Distribute the filling evenly over the dough.

Roll into a roll, cut into pieces about 1.5-2 cm thick. Place with the cut side up directly on a baking sheet (preferably with baking paper), keeping a small distance between the “snails”; I have a ceramic mold with a diameter of 28 cm.

Cover with cling film. Leave for about an hour until the buns have increased in volume and are connected to each other. Preheat the oven to 175-180 degrees. Before baking, brush the buns with beaten egg. Bake for about 22-25 minutes until golden brown.

At this time you can prepare the cream. Mix cream cheese, melted butter and powdered sugar until smooth. Add lemon juice and stir again.

Grease the snail buns with cinnamon, cranberries and nuts with cream 5 minutes after removing from the oven.

Delicious buns can be served to the table.

Bon appetit!

Snail buns are varied: they can be made with anything. This time we chose raisins, cinnamon and yeast dough on dough to make a delicious dessert, a great addition to breakfast or paired with tea, coffee, and other drinks as an afternoon snack.

Ingredients:

  • wheat flour - about 700 g
  • yeast - 12 g
  • sour cream - 200 g
  • milk - 400 ml
  • vegetable oil - 100 ml
  • raisins - 200 g
  • butter - 50–60 g
  • ground cinnamon - 3 tsp.
  • sugar - 8–9 tbsp. l.
  • salt for dough - to taste

How to make snail buns with raisins

First of all, place the raisins in a container with a lid, pour boiling water over them, cover and leave to soak.

Knead the yeast with sugar - it turns into liquid during the process; under no circumstances do we add water.

Leave the resulting liquid for 5 minutes.

Pour half a glass of heated milk into the activated yeast, add a couple of tablespoons of flour and mix. Leave for 20–25 minutes.

We get the dough.

Pour heated milk (the remaining 1.5 cups) and vegetable oil into a working bowl, add sour cream, add dough, sugar and salt to taste. Mix thoroughly. Add flour and knead the dough. Cover it with a towel and place it in a warm place.

The dough should rise a couple of times. We can easily determine if it is ready - it stops sticking to your hands.

Divide the dough into 3 parts. We roll out a layer from each. Lubricate it with melted butter, sprinkle with sugar and evenly distribute the raisins, previously dried (you can even blot the berries with a paper towel so that no moisture remains).

Roll the dough into a roll and cut into pieces.

These pieces will be our snail buns. Place them on a parchment-lined baking sheet close to each other so that the dough has no chance to unwind. Place the baking sheet in an oven preheated to 200° and bake the snail buns with raisins and cinnamon for about half an hour. We determine readiness visually.

Pie “Snail” with cherries

Required ingredients:

  • kefir - 250 ml;
  • vanilla;
  • ¼ cup powdered sugar;
  • 0.4 kg cherries (pits removed);
  • sugar - ½ cup is enough;
  • 150 gram piece of butter;

It should turn out soft and elastic. In this case, there is no need to put the dough on the middle shelf of the refrigerator. Immediately roll it out into a layer, the thickness of which should not exceed 3-4 mm. It is very important.
  2. Cut the dough layer into strips. The width of each of them is 6-7 cm.

  1. We wash fresh cherries with tap water. Be sure to remove the seeds. Place the berries in the middle of each dough strip. It turns out to be a kind of “snake”. Sprinkle the cherries with sugar.
  2. Carefully pinch the strips. Now they resemble thin rolls.
  3. Take a baking dish. Coat its bottom with oil. Place strips with sweet cherry filling in a snail shape.
  4. Preheat the oven. We recommend a temperature of 180 °C. Place the form and contents in the oven. The “Snail” pie (with cherries) will be baked for 40 minutes.

Finally

It doesn’t matter which snail pie recipe you choose. In any case, you will get baked goods with a wonderful aroma and unsurpassed taste. Continue to delight your household by preparing “Snail” with different fillings (vegetable, meat, sweet).

    In a medium saucepan, melt 110 grams of butter over low heat and then add the milk. When the mixture becomes warm, approximately body temperature (you can touch it with your little finger), remove the saucepan from the heat, add dry yeast and stir until evenly distributed. Leave it alone.

    Mix flour, 110 grams sugar, salt and cardamom in a large bowl. Make a well in the center and pour in the warm butter and milk mixture. Using a wooden spoon, mix until a dough begins to form. When the dough is no longer sticky, turn it out onto a floured, clean surface and knead for 6-8 minutes until it forms an elastic, smooth, tight dough. If you feel that the dough is still sticking to your hands during the process, add a little flour. Transfer the dough to a clean, floured bowl, cover with a clean towel, and let rise in a warm, draft-free place for 45 to 60 minutes. Remove the remaining 110 grams of butter from the refrigerator and let it soften.

    Preheat the oven to 220 degrees. Prepare the filling: Using a fork, mix the butter, 90 grams of sugar and cinnamon until you form a “paste”.

    When the dough has risen, transfer it to a floured surface, divide it into 2 parts (this will be more convenient) and roll it into a rectangle 3 mm thick. Spread the filling over the surface. Then, from the long side of the rectangle, begin to roll the roll. Using a sharp knife, cut the roll into about 12 pieces.

    You can bake individual buns; for this it is convenient to use muffin tins (preferably wide ones) or simply on a baking sheet covered with baking paper. Or you can take a pie or cake pan, place the buns at some distance from each other, let them space and bake. This is especially convenient if you are expecting guests, then everyone will break off a piece of the bun, bringing you closer together!
